Pistacia vera, the common pistachio, yields an oil characterised by a specific fatty acid ratio: 32-36% linoleic acid and 50-55% oleic acid. This composition, balanced by a unique phytosterol assemblage, differentiates it from many plant lipids.

Significant α-tocopherol — a form of vitamin E — and a complex blend of natural antioxidants are also present. These compounds protect lipid structures from oxidative stress, a common factor in fibre degradation.
